Love your videos. Another thing you can do with clay is put a sheet of plastic wrap over the clay before you cookie cut it, the plastic will give the cutout a nice beveled edge. The thicker the plastic, the bigger the bevel. Though sometimes you need to clean up the edge of the clay after cutting it. (baked clay is easy to clean up with a powered manicure tool)
